Elsa Barbie Doll Cake

Now a barbie doll cake is nothing new.. the lovely Ali from Kids Chaos tells me her mother use to make it for her when she was a child… awww.  It is however new for me.. especially since cake decorating isn’t my strong point (I usually cheat and “plonk a toy on top” – our Cars on our Cars Party Cake, our Spiderman on our “Spiderman Cake” and our Playmobil Unicorn on our “Unicorn Cake“). As Pip Squeak turned five, I fancied an Elsa from Frozen Cake… now I could have bought some of those Frozen Figurines knocking about to pop on top (my back up plan, had I actually bought any), but I had already bought an Elsa Barbie Doll and an Anna Barbie Doll.. and I thought, hey, I have the dolls, why not? The big “why not”, is though the Barbie Doll cakes are reasonably straightfoward, I am totally rubbish at icing – be it piped icing or fondant icing. I just can’t do it. Also.. it turns out that my Elsa legs were very very very long. And my cakes have a tendency to squish a bit, especially if there are too many layers. PANIC. Luckily, I have lots of Facebook readers who encouraged me to GO FOR it (take those Elsa legs OFF!) and a lovely neighbour and friend, Ali from Kids Chaos, who in the end did the fondant icing for me (and made it look so easy.. next time, I CAN do it, right?!). So….. Ta-daaaa:

Elsa Barbie Doll Cake

To make your Elsa Cake… you will need:

  • A Kugelhupf Cake form (or use a Pyrex Bowl – you will need to cook it at a lower heat for longer and later cute a “hole” out of the centre – see video below)
  • An Elsa Barbie Doll
  • White ready to roll fondant icing
  • Blue food colouring
  • Some cling film or foil
  • Mini Marshmallows and silver balls for decorating
  • Icing sugar for “rolling out
  • Jam (very important!!)

Easy Marble Cake Recipe

  • 250g Butter (at room temperature)
  • 250g Caster Sugar
  • Vanilla essence
  • 4 medium sized eggs
  • Pinch of salt
  • 500g plain flour
  • one tea spoon of baking powder
  • 0.125 liters milk
  • 4 tablespoons of cocoa powder
  • 3-4 tablespoons of milk

Preheat the oven 180C

1) Mix butter and sugar and until smooth. Add eggs, vanilla and salt and mix together.

2) Gradually add the flour, baking powder and milk. This is quite a stiff dough! Add a splash more of milk if need be.

3) Put half your mixture in a well buttered & floured Kugelhupf dish.

4) Mix cocoa with milk, until you have a smooth paste and add to the remaining half of the cake mixture and mix in well.

5) Spoon half onto top of the vanilla mixture already n the Kugelhup dish. With a spoon or fork, gently mix the too up a little – bring some of the vanilla mixture to the surface. But not too much. Then add the final chocolate cake mixture and place into the oven.

6) Cook for approx 50-60min. Do a knife test – if it comes out clean, your cake is ready.

Let cool for 10min, then turn out of the form and let cool FULLY.

1) Remove Elsa’s legs (if need be).

2) Wrap Elsa’s lower have in foil or cling film, to avoid her getting dirty! Then pop her into the centre of your cake and “wedge in place” with some marshmallows.

3) Now colour your fondant icing – this is a bit of a guessing game.. and you may need to add more colour! And you will get blue fingers!

4) Cove your cake in jam. This is very important else you fondant won’t stay on!

5) Roll out your fondant, to about 10-15cm width and nice and long. Then cut rectangles out to slowly attached to your doll – i.e. we did NOT put one long strip on, which would have been difficult to handle. But approximately 5 lots with overlapping folds. Use icing sugar to “flour your surface” and avoid your fondant sticking.

6) Make a second batch of blue, slightly lighter fondant icing and roll out and repeat (more jam!). Yep.. it is MESSY! 🙂

7) Once your second layer is on, hide where the icing meets the Elsa Doll, with lots of white mini marshmallows. Sprinkle some silver balls and done! You may want to use a damp baker’s brush to brush down and icing sugar residue, we left it on, as it looked like snow dust!

Sit back and admire your Elsa Doll Barbie Cake! I am SOOOOO chuffed that we went for it and that I got the help from Ali to get it sorted! Yay!
